Ingredients
  

For the chicken
  • 1 lb 450 g boneless chicken breast
  • 1 –1½ tsp salt to taste
  • 1 tsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 2 tbsp oil
For the sauce
  • 2 cups 480 ml heavy whipping cream
  • 1 cup 240 ml chicken broth
  • 1 tbsp butter
  • 2 tbsp oil
  • 1 small onion finely diced (about ½ cup)
  • 6 –8 cloves garlic finely chopped
  • 1 red bell pepper diced
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp Italian seasoning
  • 1 tsp red chili flakes
  • 1 –1½ tsp salt to taste
  • ½ cup 50 g freshly grated Parmesan cheese
  • ¾ –1 cup 180–240 ml reserved pasta water
To assemble
  • 8 –10 oz 225–280 g pasta of choice

Method
 

  1. Cook pasta
Boil pasta in salted water until al dente.
Reserve ¾–1 cup pasta water, then drain.
  2. Season the chicken
Season chicken with salt, pepper, garlic powder, smoked paprika, and oil.
Mix well.
  3. Cook chicken
Heat oil in a pan over medium heat.
Cook chicken for 10–12 minutes, flipping until fully cooked (165°F / 75°C).
Remove, rest, and slice.
  4. Sauté aromatics
In the same pan, add butter + oil.
Add onion and cook for 1–2 minutes.
Add garlic and cook for 30 seconds.
  5. Add red bell pepper
Cook for 2–3 minutes until slightly softened.
  6. Cook tomato paste
Add tomato paste and cook for 1–2 minutes, stirring constantly.
  7. Add seasoning
Add paprika, garlic powder, black pepper, Italian seasoning, chili flakes, and salt.
Mix well.
  8. Add chicken broth
Pour in broth and simmer for 2–3 minutes.
  9. Add cream & Parmesan
Add heavy cream and simmer until slightly thickened.
Stir in Parmesan until smooth.
  10. Adjust consistency
Add pasta water gradually until sauce is silky.
  11. Combine
Add pasta and mix well.
Add sliced chicken and combine.
  12. Serve
Serve hot with extra Parmesan if desired.
