Ingredients
  

  • 200 g unsalted butter softened
  • 400 g sugar
  • 5 eggs room temperature
  • 5 g vanilla extract
  • 180 g milk
  • 240 g heavy cream
  • 60 g fresh lemon juice
  • Zest of 2 lemons
  • 375 g all-purpose flour
  • 14 –16 g baking powder
  • 250 –300 g fresh blueberries
  • 10 g flour for coating blueberries

Method
 

  1. Step 1 — Prepare the Pan
  2. Preheat oven to 350°F (175°C).
  3. Grease a bundt pan thoroughly.
  4. Step 2 — Cream Butter & Sugar
  5. Beat butter and sugar until light and fluffy.
  6. Step 3 — Add Eggs
  7. Add eggs one at a time.
  8. Mix well after each addition.
  9. Step 4 — Add Wet Ingredients
  10. Mix in vanilla, milk, heavy cream, lemon juice, and lemon zest.
  11. Step 5 — Add Dry Ingredients
  12. Whisk flour and baking powder together.
  13. Fold gently into batter.
  14. Step 6 — Add Blueberries
  15. Toss blueberries with flour.
  16. Fold gently into batter.
  17. Step 7 — Bake
  18. Pour batter into prepared pan.
  19. Bake 50–60 minutes or until toothpick comes out clean.
  20. Step 8 — Cool
  21. Let cake cool before removing from pan.
  22. Step 9 — Glaze & Serve
  23. Add lemon glaze if desired.
  24. Slice and enjoy.
