TOMATO MUSHROOM PASTA

PASTA

My favorite pasta for this recipe is spaghetti. But you can use any type of pasta you prefer. I recommend fettuccine, spaghetti or penne.

Start cooking the pasta. To get the perfect al dente texture, follow the instructions on the package and don’t forget to add a little salt to the boiling water. While the pasta is cooking, reserve about half a cup of the cooking water and, once the 
pasta has reached its ideal doneness, just drain it.

This way, you can multitask efficiently, starting the sauce while the pasta cooks, making sure everything is ready in 
harmony.

THE SAUCE

  • Butter
  • Tomatoes or Cherry
  • Mushrooms
  • Pepper
  • Salt
  • Olive oil
  • Garlic

Ingredients
  

  • 240 g pasta
  • 3 tbsp butter
  • 16 cherry tomatoes halved
  • 200 g mushrooms
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • Salt and pepper
  • 1 handful chopped parsley

Instructions
 

  • Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
  • In a saucepan,add the olive oil over mediumheat. Add in the chopped mushrooms and let them cook until it releases its water and has browned.
  • Sprinkle some salt and pepper, to taste.
  • Add in the minced garlic, chopped tomatoes and butter and mix. Add some pasta water to the sauce.
  • Add in the cooked pasta and mix it well till incorporated.
  • Top with some fresh chopped parsley and enjoy!
