Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
In a saucepan,add the olive oil over mediumheat. Add in the chopped mushrooms and let them cook until it releases its water and has browned.
Sprinkle some salt and pepper, to taste.
Add in the minced garlic, chopped tomatoes and butter and mix. Add some pasta water to the sauce.
Add in the cooked pasta and mix it well till incorporated.
Top with some fresh chopped parsley and enjoy!
