- 175 g milk

- 2 tsp vanilla extract
THE FILLING
- 3 yellow peaches
- Juice of ½ a lemon
- 50 g brown sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
Instructions
THE TOPPING
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Pour in the milk, melted butter, and vanilla extract. Whisk until just combined, then set aside.
THE FILLING
- Get a large bowl of ice water ready. Bring a pot of water to a simmer, then lower the peaches in for 30-60 seconds. Once done, transfer them to the ice water to cool completely.
- Gently pinch the peach skin to start peeling or use a knife to make a small cut. The skin should come off easily! Slice the peaches into ½" thick pieces.
