Known as a “galette” in French or “crostata” in Italian, it is essentially a flat cake made from short crust pastry and generously filled with sweet or savory delights. Very easy to make, these rustic delights can be made with any fruit you have on hand. Think of them as a simplified, but equally delicious, version of a pie!
WHAT DO I NEED TO BAKE A GALETTE?
Luckily, there’s not much between you and this delicious galette! First, let’s talk about the crust. You have a choice here. You can opt for a store-bought short crust pastry, which works perfectly for this recipe. Alternatively, if you’re feeling adventurous, you can make your own right away: all you need is a mixture of flour, sugar, salt, butter, and water. For the topping, combine some fresh strawberries (or your favorite fruit), with a little sugar and vanilla.

THE BAKING PROCESS
When your galette is set to bake, give it a gorgeous finishing touch by brushing it with an egg wash, creating a rich, golden brown glaze. Sprinkle a bit more granulated sugar on top for a delightful crunch to the crust! Pop it into the oven at 180°C (fan) for approximately 25-30 minutes until the crust achieves a tempting golden hue. Once done, take it out, and while it’s still warm, drizzle the galette with the reserved strawberry juices from earlier. Feeling indulgent? STRAWBERRY GALETTE
Ingredients
- 1 puff pastry roll
- 500 g fresh strawberries
- 1/2 cup sugar
- 1/2 tbsp lime juice
- 1/2 tbsp lime zest
- 1 tbsp cornstarch
- 2 tbsp strawberry jam
- 1 egg
- Ice cream
Instructions
- In a bowl, combine the strawberries, sugar, cornstarch, lime juice and zest. Set aside.
- Cut your sheet of puff pastry into a circle and lightly mark an inch border around your puff pastry sheet.
- Spread a thin layer of jam, then add the strawberries. Fold over the border and brush with egg wash.
- Bake for 25-30 mins at 200 C or until golden brown. Serve warm with ice cream.
