COOKING THE PASTA

My favorite pasta to use for this recipe is Tagliatelle. But you can also use any type of pasta you prefer. I would recommend penne, farfalle or spaghetti.

Begin by cooking the pasta to the perfect al dente texture, following the package instructions, and don’t forget to add a pinch of salt to the boiling water. As the pasta simmers, save around half a cup of the cooking water, and once the pasta reaches its ideal doneness, simply drain it.

This way, you can efficiently multitask, starting the sauce while the pasta cooks, ensuring everything is ready in harmony.

Ingredients
  

  • 1 garlic head
  • 2 tbsp olive oil
  • 240 g pasta
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 tbsp garlic powder
  • Salt & pepper to taste
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 cup parmesan cheese
  • 1/2 cup pasta water

Instructions
 

  • Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
  • In an oven safe dish, add the garlic head along with the olive oil and let it roast in the oven for approximately 1 hour at 220 degrees, until softened.
  • In a saucepan, add the butter, and the softened garlic. Let it simmer until fragrant.
  • Add in the heavy cream,salt,pepper,garlic powder,lemon juice and lemon zest.
  • Add in parmesan cheese and the pasta afterwards.
  • Add some pasta water and let it thicken.
  • Serve with some extra lemon zest and parmesan cheese!
