THE PASTA
For this recipe, my preferred pasta is elbow macaroni. However, you can choose any pasta you like. I suggest trying ziti, penne, or rigatoni. Start by boiling the pasta until it’s just the right level of al dente by following the directions on the package, and remember to add a little salt to the water. While the pasta cooks, keep about half a cup of the water, and once it’s cooked just right, drain it. This allows you to prepare the sauce simultaneously, making sure everything is ready at the same time.
THE PINK SAUCE
Our Pink Mac and Cheese Sauce puts a fun twist on the traditional mac and cheese. It’s a creamy mixture of cheese with a touch of tomato, giving it that fun pink shade. Picture a smooth sauce that embraces the cheese with a hint of sweetness from the tomato. Each spoonful is a flavor journey, blending the comforting taste of mac and cheese with the exciting, pink creation of our sauce. It’s your beloved comfort food with a bright twist. So go ahead and relish the wonderful blend of flavors in every bite!
Ingredients you need for the sauce:
- Butter
- Olive oil
- Garlic
- Tomato paste
- Heavy cream
- Salt
- Pepper
- Garlic powder
- Onion powder
- Parmesan cheese
- Gouda cheese
- Mozzarella cheese


PINK MAC AND CHEESE
Ingredients
- 250 g pasta
- 3 tbsp butter
- 1 tbsp olive oil
- 3 garlic cloves minced
- 3 tbsp tomato paste
- 1 cup heavy cream
- 1 tbsp garlic powder
- 1 tsp onion powder
- Salt and pepper
- 1 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 1/2 cup gouda cheese
Instructions
- Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
- In a pan over medium heat, melt 3 tbsp of butter with a touch of olive oil.
- Sauté 3 minced garlic cloves until they become fragrant.
- Stir in 3 tbsp of tomato paste, cooking until it deepens to a rich red hue, then add 1 cup of your preferred tomato sauce.
- When it starts simmering, introduce 3/4 cup of heavy cream. Stir and bring it to a gentle simmer.
- Season the sauce with salt, pepper, onion/garlic powder.
- Toss in 1/2 cup of gouda , 1/2 cup mozzarella, and 1/2 cup parmesan.
- Combine this cheesy goodness with your cooked pasta, and add a bit of pasta water.
- Let it melt for a few minutes, then finish with more parmesan cheese. Enjoy while warm!
