Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
In a pan over medium heat, melt 3 tbsp of butter with a touch of olive oil.
Sauté 3 minced garlic cloves until they become fragrant.
Stir in 3 tbsp of tomato paste, cooking until it deepens to a rich red hue, then add 1 cup of your preferred tomato sauce.
When it starts simmering, introduce 3/4 cup of heavy cream. Stir and bring it to a gentle simmer.
Season the sauce with salt, pepper, onion/garlic powder.
Toss in 1/2 cup of gouda , 1/2 cup mozzarella, and 1/2 cup parmesan.
Combine this cheesy goodness with your cooked pasta, and add a bit of pasta water.
Let it melt for a few minutes, then finish with more parmesan cheese. Enjoy while warm!
