HOW TO MAKE THESE MINCE-FILLED PITAS
To make these meat-filled rolls, follow these simple steps:
- Make the filling: In a bowl, mix together your favorite meat (such as ground beef). season with salt and pepper. You can also add a little olive oil to keep the filling moist.
- Fill the pitas: Cut the pita bread in half or quarters, depending on its size. Carefully open each pita pocket and fill with a generous amount of the meat mixture. Press the filling down to ensure it is evenly distributed.
- Oil Brush: Lightly brush the outside of each pita filled with olive oil or melted butter. This helps them crisp up during cooking.
- Cooking the Arayes: There are a few ways to cook your rays to get that perfect crispy texture:
- Grilling: Preheat your grill to medium-high heat. Place the filled pitas on the grill and cook for about 3 to 4 minutes on each side, or until the bread is crispy and the meat is cooked through.
- Frying in a Pan: Heat a pan over medium heat. Place the stuffed pitas in the pan and cook for 3 to 4 minutes on each side, pressing lightly with a spatula, until golden brown and crispy.
- Baking: Preheat oven to 400°F (200°C). Place the stuffed pitas on a baking sheet and cook for 10 to 15 minutes, turning halfway through, until the meat is crispy and cooked through.


MEAT STUFFED PITA BREAD (ARAYES)
Ingredients
- 500 g minced meat
- 1 tbsp dried parsley
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp spicy paprika
- Salt and pepper to taste
- 2-3 pita bread halved
- Vegetable oil for frying
- Pomegranate Molasses for topping
- Chopped parsley for topping
Instructions
- Mix the minced meat, all spices and set aside.
- Cut the pita in half and fill each half with the seasoned meat, spreading it evenly to your preferred thickness.
- Brush all sides of the filled pita with oil.
- Preheat a pan or skillet over medium-high heat.
- Cook the Arayes on each side (top, bottom, and the open end) for 2-3 minutes until they turn a deep golden brown.
- Slice in half and serve hot!
