THE APPLE PIE FILLING

Ingredients
  

For the puff pastry

  • 1 puff pastry package
  • 1 egg
  • 1 tbsp whole milk

For the apple pie filling

  • 2 large apples
  • 3 tbsp unsalted butter
  • 1/3 cup light brown sugar
  • 1 1/4 tsp cinnamon
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1/2 tbsp lemon juice
  • 2 tsp cornstarch

For the cinnamon sugar topping

  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

Instructions
 

Make the egg wash

  • Whisk together the egg and milk in a bowl. Set aside.

Prepare the cinnamon sugar

  • Combine the cinnamon and sugar in a bowl and set aside.

Make the apple pie filling

  • In a pan over medium heat, melt the butter, and then add the apples, light brown sugar, cinnamon, salt, vanilla extract, and lemon juice.
  • Stir the ingredients together and let them simmer on low heat for 6 to 8 minutes, or until the apples become tender when poked with a fork.
  • In a separate small bowl, create a cornstarch slurry by combining water and cornstarch. Add this slurry to the pan, stirring to thicken the filling. Finally, remove it from the heat and transfer it to a separate bowl.

Prepare the puff pastry

  • Start by preheating your oven to 400°F ( 205 degrees ).
  • Layout the puff pastry on a baking sheet and carefully cut each sheet into four equal pieces.
