Method
Make the egg wash
- Whisk together the egg and milk in a bowl. Set aside.
Prepare the cinnamon sugar
- Combine the cinnamon and sugar in a bowl and set aside.
Make the apple pie filling
- In a pan over medium heat, melt the butter, and then add the apples, light brown sugar, cinnamon, salt, vanilla extract, and lemon juice.
- Stir the ingredients together and let them simmer on low heat for 6 to 8 minutes, or until the apples become tender when poked with a fork.
- In a separate small bowl, create a cornstarch slurry by combining water and cornstarch. Add this slurry to the pan, stirring to thicken the filling. Finally, remove it from the heat and transfer it to a separate bowl.
Prepare the puff pastry
- Start by preheating your oven to 400°F ( 205 degrees ).
- Layout the puff pastry on a baking sheet and carefully cut each sheet into four equal pieces.
- Lightly brush the edges of each piece with a touch of the egg wash.
- Place the apple filling along one side and fold it over, pressing the edges down to create a secure seal. Use a fork to gently press around the edges for a snug closure. Repeat these steps for the rest of the piece.
- Finally, brush the tops with the remaining egg wash and generously sprinkle with cinnamon sugar.
- Pop the pastries into the oven and bake for about 20 to 25 minutes or until they turn a beautiful golden brown.
