The magic happens. when spoonfuls of a creamy cheese mixture, or “yum cheese” as I like to call it, melt into a delicious mix of pasta, ground beef, and a rich, herbaceous tomato-based broth.
THE INGREDIENTS YOU NEED ARE:
- olive oil
- yellow onion
- garlic
- minced meat
- dried lasagna
- Dried spices
- Tomato paste / tomato juice
- Meat broth
- Mozzarella cheese
- Salt and pepper
- Fresh parsley or basil
HOW TO MAKE LASAGNA SOUP
-Heat the olive oil in a large skillet over medium heat.
-Add the minced onion and garlic and cook until fragrant.
-Add the minced meat and cook until golden brown.
-Season with salt, pepper, garlic cloves, and onion cloves.
-Add the tomato juice and tomato paste and bring to a boil.
-Add the meat broth until completely covered and bring to a boil.
-Add the broken lasagna noodles and cook for 10 minutes until the pasta is cooked.
-Add the mozzarella cheese and serve with chopped parsley.
HOW TO STORE LASAGNA SOUP
When storing leftovers, it is best to store the soup, cooked pasta and cheese in separate containers in the refrigerator. Avoid mixing the soup and pasta to prevent the pasta from absorbing too much meat juices and becoming soggy. For the pasta, after school, toss with a little olive oil and fold it in little by little so that it is covered without sticking. This simple step ensures that your leftovers are fresh. and maintain their delicious texture when reheated.

Ingredients
- 1 tbsp olive oil
- 200 g minced meat
- 200 g broken lasagna
- 1 onion finely chopped
- 2 garlic cloves finely chopped
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp tomato paste
- 1 cup tomato juice
- 1 cup meat broth
- 1/2 cup mozzarella cheese
Instructions
- In a saucepan, add some olive oil, onion, garlic and let it simmer until fragrant.
- Add the minced meat and let it cook until browned.
- Season with salt, pepper, onion powder, garlic powder and tomato paste.
- Pour the tomato juice and meat broth until fully covered. Let it simmer.
- Add in the broken lasagna and let it simmer for 10 minutes, until the pasta is cooked.
- Top with mozzarella cheese and some chopped parsley or basil.
- Serve while warm!
