WHICH TYPE OF SHRIMP SHOULD I USE?

In this recipe, the size of the shrimp doesn’t matter. I prefer using king sized shrimps by blending them in a food processor rather than chopping them by hand.

TIPS FOR PERFECTING THESE SHRIMP BALLS

  • Shrimp: Whether fresh or frozen, ensure they’re fully thawed and patted dry. Small to medium-sized shrimp work well.
  • Seasonings: Garlic, sugar, soy sauce, and oyster sauce provide depth of flavor to the shrimp mixture.
  • Binding Agent: Cornstarch or potato starch helps bind and moisten the mixture. Cornstarch is used here but potato starch works too.
  • Oil: Opt for a neutral oil like vegetable or canola with a high smoke point for frying. Mince Shrimp: Hand-chop or use a food processor to finely chop the shrimp, aiming for texture rather than a paste.
  • Chill the Mixture: Refrigerate for at least 30 minutes to meld flavors and ease shaping. Hot Oil: Heat to 350°F (175°C) for crispy, evenly cooked shrimp balls.
  • Fry in Batches: Avoid overcrowding the pan for consistent frying and temperature maintenance.

  • 14 large shrimps
  • 2 garlic cloves minced
  • 4 sheet egg roll wrapper
