Ingredients
  

  • 250 g pasta
  • 2 tbsp butter
  • 3 yellow onions thinly sliced
  • 2 garlic cloves chopped
  • 2 cups beef stock
  • 1/2 cup heavy cream
  • 1 tbsp thyme
  • Salt and pepper to taste
  • 1 cup parmesan cheese

Instructions
 

  • Heat the butter over a large skillet over medium heat. When shimmering, add the onions and a generous pinch of salt. Cook, stirring frequently until deeply caramelized. About 25-30 minutes. 
  • Add the garlic and thyme. Sauté for 3-4 minutes .Add the raw pasta in and then add the beef stock until the pasta is all covered.
  • Bring to a boil and let the pasta cook for 8-10 minutes. Add in the heavy cream and parmesan cheese.
  • Turn off the heat and stir. Serve while warm!
