CRISPY SALMON FRIED RICE BITES
Ingredients
- 2 cups sushi rice cooked and cooled
- 200 g smoked salmon
- 3 tbsp mayonnaise
- 1 tbsp siracha
- 2 green onions finely chopped
- 1 avocado mashed
- Jalapeños thinly sliced, for topping
Instructions
PREPARE THE SALMON MIXTURE
- In a mixing bowl, combine the flaked smoked salmon, mayonnaise, sriracha sauce, and green onions. Mix until everything is well combined and set aside.
SHAPE THE RICE
- Press the cooked rice firmly into a medium-sized pan until it’s compact and sticking together. For the best results, refrigerate it overnight to help it set.
- Before cooking, take it out of the fridge and get it out of the pan. Cut into small squares.
- Heat vegetable oil in a frying pan over medium-high heat. Once hot, carefully place the rice bites into the oil. Fry for 2-3 minutes on each side until golden and crispy. Remove and drain on a paper towel.
- Top with mashed avocado and then salmon mixture. Top with Jalapeños and enjoy!
