- 2 cups sushi rice cooked and cooled
- 200 g smoked salmon
- 3 tbsp mayonnaise
- 1 tbsp siracha
- 2 green onions finely chopped
- 1 avocado mashed
- Jalapeños thinly sliced, for topping
PREPARE THE SALMON MIXTURE
In a mixing bowl, combine the flaked smoked salmon, mayonnaise, sriracha sauce, and green onions. Mix until everything is well combined and set aside.
SHAPE THE RICE
Press the cooked rice firmly into a medium-sized pan until it’s compact and sticking together. For the best results, refrigerate it overnight to help it set.
Before cooking, take it out of the fridge and get it out of the pan. Cut into small squares.
Heat vegetable oil in a frying pan over medium-high heat. Once hot, carefully place the rice bites into the oil. Fry for 2-3 minutes on each side until golden and crispy. Remove and drain on a paper towel.
Top with mashed avocado and then salmon mixture. Top with Jalapeños and enjoy!
