CRISPY SALMON FRIED RICE BITES

These crispy salmon fried rice bites are the perfect little flavor-packed snack!

Ingredients
  

  • 2 cups sushi rice cooked and cooled
  • 200 g smoked salmon
  • 3 tbsp mayonnaise
  • 1 tbsp siracha
  • 2 green onions finely chopped
  • 1 avocado mashed
  • Jalapeños thinly sliced, for topping

Instructions
 

PREPARE THE SALMON MIXTURE

  • In a mixing bowl, combine the flaked smoked salmon, mayonnaise, sriracha sauce, and green onions. Mix until everything is well combined and set aside.

SHAPE THE RICE

  • Press the cooked rice firmly into a medium-sized pan until it’s compact and sticking together. For the best results, refrigerate it overnight to help it set.
  • Before cooking, take it out of the fridge and get it out of the pan. Cut into small squares.
  • Heat vegetable oil in a frying pan over medium-high heat. Once hot, carefully place the rice bites into the oil. Fry for 2-3 minutes on each side until golden and crispy. Remove and drain on a paper towel.
  • Top with mashed avocado and then salmon mixture. Top with Jalapeños and enjoy!
