COOKING THE PASTA
My favorite pasta to use for this recipe is Penne. But you can also use any type of pasta you prefer. I would recommend spaghetti, farfalle or fusilli.
Begin by cooking the pasta to the perfect al dente texture, following the package instructions, and don’t forget to add a pinch of salt to the boiling water. As the pasta simmers, save around half a cup of the cooking water, and once the pasta reaches its ideal doneness, simply drain it.
This way, you can efficiently multitask, starting the sauce while the pasta cooks, ensuring everything is ready in harmony.

Tips for the Best Chicken Alfredo Pasta
1. Use freshly grated Parmesan
- Pre-shredded cheese won’t melt as smoothly.
2. Don’t overcook the chicken
- Sear it on medium-high heat for a crispy, golden crust while keeping it juicy.
3. Cook pasta al dente
- It absorbs the sauce better without getting mushy.
4. Don’t let the sauce boil
- Simmer gently for a silky texture—boiling can cause it to separate.
5. Finish with pasta water
- A splash of reserved pasta water helps the sauce stick to the noodles.
INGREDIENTS YOU NEED FOR THE SAUCE:
- Butter
- Olive oil
- Flour
- Cream cheese
- Milk
- Garlic powder
- Oregano
- Mozzarella cheese
- Chicken
- Paprika
- Rosemary


CHICKEN ALFREDO PASTA
Ingredients
For the pasta
- 240 g pasta
- 3 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 1 tbsp cream cheese
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp chili flakes
- Salt & Pepper to taste
- 1/2 cup mozzarella cheese
For the grilled chicken
- 250 g chicken breast
- 1 tbsp paprika powder
- Salt & pepper to taste
- 2 tsp rosemary
- 1 tbsp butter
- 1 tsp olive oil
Instructions
- In a bowl, marinate the chicken with paprika, rosemary, salt and pepper. Let it marinate for 1 hour at least for the best results.
- In a well-heated pan, add some butter and olive oil, then add the chicken and let it grill on both sides until done. Set aside.
- In another saucepan, add the butter and the flour and whisk them very well. Add in the milk while still whisking until smooth and creamy.
- Season with salt, pepper, oregano and chili flakes.
- Add in the mozzarella cheese and let it simmer.
- Add in the cooked pasta and mix very well.
- Top the pasta with the grilled chicken with some extra oregano.
- Enjoy while warm!
