Ingredients

  • 1 garlic head
  • Olive oil
  • 1 baguette bread
  • 250 g butter
  • 1 onion finely chopped
  • 1 tbsp tomato paste
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1 chicken breast
  • 1 egg
  • All-purpose flour
  • Panko breadcrumbs
  • 3 cups Frying oil
  • Mozzarella cheese

Method

  1. In a pot, add your garlic cloves with some olive oil, salt and pepper and let them cook in the oven at the highest temperature until they are soft.
  2. In a saucepan, add 30 g of butter, chopped onion, tomato paste and heavy cream. Let it simmer, then add some parmesan cheese, salt and pepper.
  3.  Coat the chicken breast in flour, then eggs then bread crumbs. Fry in a well heated frying oil until golden.
  4. In a small bowl, add 200 g of butter and mix them with the softened garlic cloves. Mix until incorporated.
  5. Spread the garlic butter on the bread and broil at 180 degrees until slightly golden.
  6. Top the chicken with the pink parm sauce and mozzarella and bake till the cheese has melted.
  7. For the assembly, top the bread with the chicken and add some more sauce and fresh basil.
