Ingredients
  

  • 1 garlic head
  • Olive oil
  • 1 baguette bread
  • 250 g butter
  • 1 onion finely chopped
  • 1 tbsp tomato paste
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1 chicken breast
  • 1 egg
  • All-purpose flour
  • Panko breadcrumbs
  • 3 cups Frying oil
  • Mozzarella cheese

Instructions
 

  • In a pot, add your garlic cloves with some olive oil, salt and pepper and let them cook in the oven at the highest temperature until they are soft.
  • In a saucepan, add 30 g of butter, chopped onion, tomato paste and heavy cream. Let it simmer, then add some parmesan cheese, salt and pepper.
  •  Coat the chicken breast in flour, then eggs then bread crumbs. Fry in a well heated frying oil until golden.
  • In a small bowl, add 200 g of butter and mix them with the softened garlic cloves. Mix until incorporated.
  • Spread the garlic butter on the bread and broil at 180 degrees until slightly golden.
  • Top the chicken with the pink parm sauce and mozzarella and bake till the cheese has melted.
  • For the assembly, top the bread with the chicken and add some more sauce and fresh basil.
