Ingredients
  

For the Brioche Dough
  • 4 cups all-purpose flour
½ cup granulated sugar
2¼ teaspoons instant yeast
1¼ cup warm milk
1 large egg
1 egg yolk
3 tablespoons unsalted butter softened and cubed
  • 1 beaten egg for brushing
For the Filling
  • 8 oz cream cheese softened
½ cup powdered sugar
¼ cup whole milk
2 teaspoons vanilla bean paste
  • Strawberry jam instead of blueberries
For the Coffee Cake Crumb
  • cup brown sugar
¾ cup all-purpose flour
2 teaspoons ground cinnamon
6 tablespoons melted butter
Optional Vanilla Glaze
  • cups powdered sugar
1 teaspoon vanilla extract
2–3 tablespoons milk
Pinch of salt

Method
 

Make the Brioche Dough
  1. In a stand mixer combine:
  2. flour
sugar
yeast
egg
egg yolk
warm milk
  3. Using the dough hook, mix on low speed for 2–3 minutes until combined.
  4. Add the softened butter cubes and knead for 3–4 minutes until a soft, smooth dough forms.
  5. Transfer the dough to a greased bowl, cover with plastic wrap, and allow it to rise in a warm place for 1–2 hours, or until doubled in size.
Prepare the Baking Tray
  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
Divide the Dough
  1. Once the dough has risen, transfer it to a clean well floured surface.
  2. Divide it into 8–12 equal pieces and roll each one into a tight ball.
  3. Place them on the prepared baking tray.
Make the Cream Cheese Filling
  1. In a mixing bowl beat the softened cream cheese for 1–2 minutes until smooth.
  2. Add:
  3. powdered sugar
milk
vanilla bean paste
  4. Beat for another 2–3 minutes until the mixture becomes smooth and fluffy.
Prepare the Crumble
  1. In a bowl combine:
  2. brown sugar
flour
cinnamon
melted butter
  3. Mix until the mixture forms a crumb-like texture.
Shape the Danishes
  1. Using your fingers, press the center of each dough ball to create a shallow well while leaving a ½-inch border around the edge.
  2. The center should be slightly thinner than the edges.
  3. Place a spoonful of cream cheese filling into the center of each pastry.
  4. Add a spoonful of strawberry jam on top.
Add the Crumble
  1. Brush the edges with a beaten egg.
  2. Sprinkle the cinnamon crumble around the edges and lightly over the center if desired.
Bake
  1. Bake the danishes for 20–30 minutes, rotating the pan halfway through baking.
  2. They are ready when the edges are deep golden brown and the centers are set.
  3. Allow them to rest for 10 minutes before glazing.
Make the Glaze (Optional)
  1. In a small bowl whisk together:
  2. powdered sugar
vanilla extract
milk
pinch of salt
  3. Mix until smooth and drizzle over the warm danishes.
