Method
- In a saucepan, add in the olive oil, garlic, cherry tomatoes, red peppers and let it simmer until the garlic is fragrant and tomatoes are softened.
- Season with some salt and pepper.
- Add in the tomato sauce, heavy cream and let it simmer until thickened.
- Add in the uncooked gnocchi and let it sit until cooked.
- Add in the chopped basil, parmesan cheese and mix.
- Serve while warm!
