FOR THE SUSHI RICE
- 1 cup sushi rice
- 1 1/4 cup water
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
FOR THE FILLING
- 8-10 fried shrimps
- 1/2 avocado sliced
- 1/2 cup chopped lettuce
- 2 tbsp cream cheese or mayonnaise
- Soy sauce optional
FOR THE ASSEMBLY
- 2 large nori sheets
- Sesame seeds
- 1/2 cup cooked rice per burrito
Prepare the rice: Rinse the sushi rice until the water runs clear. Cook according to package instructions, then mix with rice vinegar, sugar, and salt. Let cool.
Fry the shrimps: If using fresh shrimps, dip the shrimps in egg mixture, then coat in flour. Then fry till golden.
Assemble the burrito: Lay a sheet of nori on a bamboo sushi mat (or a clean surface). Spread an even layer of sushi rice, leaving about 1 inch of space at the top edge.
Add fillings: Arrange shrimps, avocado, lettuce, and cream cheese or spicy mayo in the center. Top with sesame seeds.
Roll it up: Gently lift the edge of the nori and roll tightly, tucking in the fillings as you go. Seal with a bit of water if needed.
Slice & Enjoy! Cut in half, sprinkle with sesame seeds, and serve with soy sauce or extra spicy mayo!
