Ingredients
  

  • 220 g pasta
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1/2 pumpkin puree can
  • 1 1/2 cup heavy cream
  • Salt & Pepper to taste
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 3/4 cup parmesan cheese
  • Sprinkle of chili flakes optional

Method
 

  1. Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
  2. In asaucepan,add the butter, olive oil over medium heat. Add in the minced garlic and let it simmer until fragrant.
  3. Add in the pumpkin puree and give it a good mix.
  4. Add in the heavy cream and mix well till combined. Season with pepper, salt, garlic powder and onion powder. Let it simmer for a bit.
  5. Lower the heat and add the parmesan cheese and mix.
  6. Now add in the cooked pasta, along with the pasta water and mix until incorporated.
  7. Feel free to add another touch of parmesan on top and some chili flakes!
