Begin by preparing the sauce: mix mayonnaise, sriracha sauce, soy sauce, sweet chili sauce and paprika together, then set aside.
In a bowl with the shrimp, combine salt, pepper and egg white. Mix thoroughly.
Create the dredging mix by blending cornstarch, salt, pepper, onion powder and garlic powder.
Heat oil for deep-frying.
Using tongs, coat each shrimp with the cornstarch mixture, shaking off the excess, then carefully place them into the hot oil.
Fry on medium-high heat until golden and crispy, approximately 3-4 minutes.
Remove the fried shrimp and drain off the excess oil using a sieve. Let them cool slightly.
Transfer the fried shrimp to a bowl and pour the prepared sauce over them, tossing until evenly coated.
In a small bowl or glass, layer some lettuce at the bottom, add the coated shrimp, and garnish with black and white sesame seeds.
