FOR THE DOUGH
- 2.5 cups water
- 4 cups flour
- 3 tbsp cornstarch
- 6 eggs
- 2/3 cup oil
- 1 tbsp sugar
- 1/4 tsp salt
- Vanilla
FOR THE SUGAR SYRUP
- 2 cups sugar
- 1 1/4 cup water
- 1 tbsp lemon juice
FOR THE DOUGH
In a saucepan over medium heat, add in the water,oil,sugar and salt and let them simmer.
Once it starts to simmer, remove the pan from the heat and add the flour, cornstarch and keep mixing till it is formed into a dough.
Leave it aside for 10 minutes till it has cooled down ( 45 degrees precisely ).
Afterwards, add in the eggs and vanilla to the dough and mix till incorporated.
Fill your piping bags with the dough and pipe them carefully in a pan filled with room temperature oil ( make sure it is NOT hot ).
After piping the dough, start heating the oil and fry till golden brown.
FOR THE SUGAR SYRUP
To make the sugar syrup, in a saucepan, add the sugar, water and lemon juice. Leave it until it starts to simmer. Once it starts to simmer, leave it for 15 minutes to simmer on low heat. Make sure to let it cool before you dip the churros in it.
Once the churros are done, dip them in the sugar syrup and feel free to top them with some crushed nuts for an extra flavor.
