GARLIC PESTO BRUSCHETTA

Pesto Bruschetta brings together three of my favorite flavors: ripe tomatoes, creamy pesto, and crunchy toasted bread. It's a delicious and distinctive appetizer sure to please everyone's palate!

Ingredients
  

FOR THE GARLIC CONFIT
  • 2 garlic heads cloves peeled
  • Olive oil enough to cover it
FOR THE TOAST AND TOPPING
  • Ready made pesto sauce
  • Ciabatta bread or sourdough bread
  • 1 burrata cheese balls
  • Cherry tomatoes
  • 1 tsp lemon juice
  • Salt and pepper

Method
 

  1. Start by making the garlic confit, place the garlic and oil in an oven-safe dish and let it cook slowly at 150 degrees for 2 hours or until softened and golden. Let it cool after.
  2. In a small bowl, mix in the cherry tomatoes, olive oil, salt, pepper and lemon juice.
  3. In a saucepan, toast the bread in olive oil until golden brown.
  4. Spread the softened garlic, then the burrata, pesto sauce and, last but not least, the cherry tomatoes.
