To roast the garlic, add the garlic cloves and olive oil in an oven-proof bowl. Let it slowly cook for 2 hours at 120 degrees until softened and slightly golden. Make sure to cover it, to prevent it from burning.
In an electric mixer, add the softened butter, softened garlic confit, parmesan cheese and fresh parsley. Mix it well until everything is incorporated into a paste form.
Spread the garlic butter paste onto the brioche bread and top with mozzarella cheese.
Broil at 180 degrees until golden. Top with extra chopped fresh parsley.
Enjoy while warm!
