To roast the garlic, add a garlic head in a pot with a sprinkle of salt, pepper and drizzle of olive oil. Cook for 1 hour (covered) at 170 Celsius degrees.
In a saucepan, add in unsalted butter, heavy cream, salt, pepper, dried oregano and garlic powder. Let it simmer until thickened. Set aside.
To make the chicken, marinate it in olive oil, paprika, salt, pepper and garlic powder. Grill on both sides till slightly golden and well cooked. Cut into small pieces and set aside.
To make the garlic butter, add in the butter, roasted garlic, salt, pepper and chili flakes. Mix well until everything is incorporated.
Spread the garlic butter onto the brioche bread. Top with the Alfredo sauce, then the mozzarella cheese. Drizzle some more alfredo sauce and top with the chopped chicken.
Broil at 180 Celsius degrees for about 5-7 minutes until the cheese has melted.
Serve while warm!
