Method
- Boil potatoes until soft (15–20 min).
- Mash until smooth.
- Add cornstarch, spices, salt, pepper, parsley. Mix well.
- Cut mozzarella into cubes.
- Flatten potato mixture, fill with cheese, and roll into balls.
- Heat oil to 350°F (175°C).
- Fry 3–4 minutes until golden and crispy.
- Drain on paper towels.
- Top with Parmesan and parsley.
- Serve with dipping sauce.
