Ingredients
  

  • 400 g pasta
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 2 tbsp lemon juice
  • 1 handful baby spinach
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 cup Parmesan cheese

Instructions
 

  • Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
  • In a saucepan, add some olive oil and minced garlic. Let it simmer until fragrant.
  • Add in the baby spinach with some pasta water.
  • Pour in the lemon juice and heavy cream.
  • Season with salt and pepper.
  • Toss in the cooked pasta and mix well till incorporated.
