Begin by bringing a generously salted pot of water to a rolling boil. Add the pasta and follow the instructions on the package for cooking time. Before draining, remember to save at least 1/2 cup of the pasta cooking water.
In a pan, combine 3 tbsp of butter with 1 tbsp of olive oil. Sauté minced garlic cloves until they’re fragrant.
Pour in heavy cream, mix, and bring it to a gentle simmer.
Season to taste and reduce the heat. Incorporate the Parmesan and mozzarella cheese and mix.
Add the cooked pasta, a splash of pasta water, and blend.
Finish with an extra layer of mozzarella, then bake at 180 degrees for 15-20 minutes until the top is slightly golden.
