Ingredients
  

For the Apple Filling
  • 3 apples peeled and diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
For the Custard
  • 3 large eggs
  • 1 ½ cups milk
  • 1/2 cup heavy cream
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • Pinch of salt
For the Bread Base
  • 6 slices brioche or challah bread day-old or lightly toasted
  • 1 tbsp butter for greasing

Method
 

Make the caramelized apple filling:
  1. In a pan, melt butter over medium heat.
  2. Add diced apples, brown sugar, cinnamon, nutmeg, and vanilla.
  3. Cook until apples soften and a thick caramel sauce forms.
  4. Reserve a few spoonfuls of sauce for topping later.
Prepare the custard:
  1. In a bowl, whisk together eggs, milk, cream, sugar, vanilla, and salt until smooth.
Assemble:
  1. Preheat oven to 180°C (350°F).
  2. Grease a baking dish with butter.
  3. Layer bread pieces evenly and spoon apple mixture between layers.
  4. Pour custard evenly over the bread.
  5. Gently press bread down to help it soak.
Bake:
  1. Bake for 35–40 minutes, until golden on top and slightly puffed.
Finish:
  1. Drizzle reserved warm apple caramel over the baked pudding.
  2. Serve warm.
