CINNAMON APPLES
- 3 cups peeled and diced Honeycrisp apples
- 2 tbsp unsalted butter
- 1/3 cup light brown sugar
- 1 tsp ground cinnamon
APPLE FRITTER CAKE
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 110 g unsalted butter melted and cooled
- 105 g light brown sugar
- 2 tsp vanilla extract
- 2 large eggs at room temperature
- 1/2 cup milk
THE ICING
- 2 cups powdered sugar
- 1/4 cup milk
Instructions
PREHEAT AND PREPARE THE SKILLET
- Preheat your oven to 350°F (175°C). Place an 11-12″ cast iron or oven-safe skillet over medium heat. Add the apples, butter, brown sugar, and cinnamon. Stir frequently and cook until the apples are tender and coated in a syrupy glaze, about 10 minutes. Remove from heat and set aside.
PREPARE THE BATTER
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate large bowl, combine the melted butter, light brown sugar, and applesauce. Whisk in the vanilla extract and eggs until well mixed. Gradually add the dry ingredients to this mixture, stirring until smooth. The batter will be quite thick.
