These crunchy apple muffins are filled with juicy apple pieces, a generous dose of cinnamon and a delicious, buttery, crunchy streusel. Top them with a scoop of vanilla ice cream and you have a delicious way to start your day, taking advantage of all the warm vibes of the season.

Absolutely delicious. We took our beloved soft muffin base and filled it with juicy apple pieces and the warm embrace of fall spices. The result? Well, it’s nothing short of a culinary masterpiece. Simply put, it’s a kiss-your-head moment with every bite.

Muffins hold a special place in my heart, but here’s the thing: A good muffin is an absolute delight, while a bad muffin is not. So how do you make these amazing oven-baked apple muffins that are big, moist, and incredibly soft? Here are some valuable tips for you:

  • Embrace the dynamic duo of milk and Greek yogurt: The combination of the richness of creamy yogurt and the amount of milk is the secret to achieving the perfect rise and explosion of flavor in these apple muffins. And if you don’t have Greek yogurt in your kitchen, don’t worry: plain yogurt works wonderfully too.
  • Gentle mixing is essential: To ensure your muffins are moist and tender, avoid overmixing the batter. Simply mix the ingredients together until they come together harmoniously, maintaining the desired crumb texture.
  • Temperature is important: To give your muffins that iconic domed top and perfect rise, start baking at a slightly higher temperature for the first 5 minutes. This initial burst of heat adds a little more to the breadcrumbs. After this short period, lower the temperature to ensure your muffins reach perfection without the risk of burning.

STORAGE

This delicious recipe makes about a dozen standard-sized muffins, which can be quite difficult to enjoy on their own. If you don’t share them With friends or family we plan everything to keep. These muffins are best stored in the refrigerator in an airtight container or resealable plastic bag. This allows them to stay completely moist without the risk of soggy at room temperature or drying out when exposed to air.

Ingredients
  

For the muffins

  • 1/2 cup unsalted butter
  • 1 cup cane sugar
  • 1/4 cup light brown sugar
  • 2 eggs at room temperature
  • 1 tsp vanilla extract
  • 6 tbsp whole milk greek yogurt
  • 6 tbsp milk
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 cups flour
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1 apple peeled and chopped

For the crumb topping

  • 1/4 cup unsalted butter
  • 1/4 cup cane sugar
  • 1/4 cup light brown sugar
  • 2/3 cup flour

For the vanilla glaze

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat your oven to 425°F. Grease 12 standard muffin tins and line them with cupcake liners. Set them aside.
  • In a small bowl, prepare the streusel topping by combining the ingredients with a fork or pastry cutter until it resembles wet sand.
  • In a large mixing bowl, mix the melted butter and sugars until well combined. Add the eggs one at a time, followed by the Greek yogurt, milk, and vanilla extract.
  • Add the flour, baking powder, spices, and salt, mixing until it starts coming together. Gently fold in the apple pieces with a rubber spatula; the batter will be thick.
  • Scoop the batter into the prepared muffin tins, filling them about 3/4 of the way. You can use a large cookie scoop or a 1/4 cup measure for consistency.
  • Sprinkle about 1 tablespoon of the streusel mixture on top of each muffin, pressing it gently into the batter.
  • Bake at 425°F for 5 minutes, then reduce the oven temperature to 375°F and bake for an additional 15 minutes until the muffins are golden brown and spring back when touched.
  • While the muffins bake, you can make the icing by mixing all the icing ingredients until smooth and creamy.
  • Once the muffins have cooled completely, drizzle them with the icing, and they're ready to enjoy!
